Simple Pulled Barbeque Chicken
This is a simple and tasty meal for those busy days when you want something quick to serve for dinner. The fastest way to make the chicken is in a pressure cooker or the Instant Pot, but you can also make the chicken in a slow cooker in which case it will take about 2 hours.
Simple Pulled Barbecue Chicken
A tasty simple meal for the whole family to enjoy.
- 6 boneless / skinless chicken thighs
- 1 21 oz jar barbecue simmer sauce (I like Stonewall barbecue sauce for pork)
- 4 brioche hamburger buns
- 1 package of broccoli slaw
- 1/4 cup slaw dressing
- 1 package frozen sweet potato fries
Heat your oven and put in the sweet potato fries, follow the instructions on the bag, they will take about 20-25 minutes. Meanwhile, place the chicken and the simmer sauce in the Instant Pot or the Pressure cooker and cook on high pressure for 8 minutes. In the meantime mix the broccoli slaw with the dressing. Toast the buns. When the chicken is done take it out of the pot and shred it with two forks.
Serve: Top bun with chicken, spoon some sauce over it and top it with as much broccoli slaw as you like. Serve with a side of sweet potato Fries.
You can also make this recipe with Pork just substitute the chicken with a pork loin and cut it into 4 pieces so that it will cook faster and be easier to shred.
