Enchiladas made from scratch would take about 2-3 hours. The following recipe is my shortcut to getting it done and on the dinner table in about 30 minutes. This is a great recipe to use up leftover chicken. You can also make this dish with pulled pork instead of chicken. This is a simple and tasty meal for those busy days when you want something quick to serve for dinner. The fastest way to make the chicken is in a pressure cooker or the Instant Pot, but you can also make the chicken in a slow cooker in which case it will take about 2 hours. You can also make this recipe with Pork just substitute the chicken with a pork loin and cut it into 4 pieces so that it will cook faster and be easier to shred.
