Pot Roast by Design

Ingredients

  • 2lb lean boneless chuck roast
  • 1lb of carrots cut into 3 inch pieces ( I use baby carrots no need for cutting)
  • 2 green bell peppers, cut into 8 wedges
  • 1 large red onion, cut into 8 wedges
  • 1/4cup ketchup
  • 1tbsp olive oil
  • 1 1/2 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1 10 ounce can of tomatoes with green chiles

Instructions

slice roast into 6 pieces

in your pot pour olive oil, then layer in the carrots, onions, bell peppers, meat, salt, oregano, ketchup, and can of tomatoes with chiles.

cook : in Instant Pot on high pressure for 1 hour or in slow cooker for 8 hours.

Two Meal Pot Roast

Why two meal pot roast? This recipe serves six but in my family, we are three so we get two meals out of the recipe. The first night I make the pot roast and serve it with sweet potato mash or regular mashed potatoes. If you do not want to make your own mashed potatoes I recommend, Simply Potatoes Traditional Mashed Potatoes, or Simply Potatoes Mashed Sweet Potatoes, you can find them in the refrigerated section of your supermarket. The second night, I serve it as Pot Roast grilled cheese with a tossed salad.

Ingredients

  • shreded pot roast
  • sliced bread
  • thin sliced cheddar cheese
  • mayonaise
Assembly

Place two slices of cheddar cheese on one slice of bread, layer on as much meat as you would like, then two more slices of cheese, top with bread . Next, spread the outside of the sandwiches with mayonnaise on both sides. Cook on a grilling press or you can grill on the stove in a skillet, untill the cheese is all melted. Enjoy!
