
Mango Salsa
Mango Salsa

Fresh mango salsa is a tasty, great addition to any of your summer entertaining events. You can serve it with tortilla chips or for a real tropical taste serve it with plantain chips. I like to serve it on grilled chicken or salmon; it is also an excellent side dish for brunch.
- 2 cups ripe mango (diced)
- 1 cup red pepper (diced)
- 1 jalapeƱo (seeded and minced)
- 1/2 cup red onion (chopped)
- 1/4 cup fresh cilantro (chopped)
- 1/4 cup fresh lime juice
- 1 tbsp honey
- salt and pepper (to taste)
Combine all the ingredients in a mixing bowl, and gently toss to mix.
Adjust the seasonings, by adding salt, pepper, and lime juice. The Salsa should be a bit sweet and a bit sour.
Tastes best served a couple of hours after making. Cover and refrigerate, until ready to serve.
